Croque madame sandwich

- 2 cans of Sardine La Sirena in oil
- 8 slices of bread
- 4 slices white or yellow cheese
- 1/2 cup spinach
- 2 tablespoons butter
- 1/4 cup Parmesan cheese
- 2 cups milk
- 3-4 tablespoons Cornstarch
- 1 tablespoon nutmeg
- 4 teaspoons mustard
- 4 eggs
- Salt and pepper
- Oil
Step 1
In a pot over medium heat, place milk, butter and cornstarch, stir until both ingredients are completely integrated and without stopping stirring, until the sauce thickes. Add nutmeg, salt and pepper. To prevent the surface of the sauce from drying, cover with film-to-skin paper, so that the paper and sauce are in direct contact.
Step 2
Toast the bread (pan and toaster oven) 10 minutes at 200 degrees, 5 minutes side by side. Spread all slices of bread with mustard on one side. Place a layer of sauce to taste on each of the slices of bread. On 4 of the previous slices, place spinach, sardine La Sirena in oil and slice of cheese.
Step 3
Cover with the other slice of bread, with the part that we have spread with the sauce down, that is, it has to be in contact with the cheese. Spread mustard again on the bread top and add sauce and Parmesan cheese. Bake toaster and gratin for about 10 minutes at 250 degrees, or until the cheese is completely melted and golden.
Step 4
Take out. In a pan, with oil, fry the eggs one by one. Serve the eggs over the sandwiches and enjoy.
